500 g sweet potato
1 egg
3 tablespoons all-purpose flour
150 g plain yogurt
a pinch of paprika
2 tablespoons canola oil, for frying
Steps
Peel the sweet potato and grate it on the fine holes of a grater so the thin shreds have time to soften during frying.
Mix the sweet potato with the egg, flour, and paprika into a thick batter. Shape 8 pancakes about 8 cm in diameter and no more than 1 cm thick.
Heat the oil in batches in a nonstick skillet over medium heat. Fry the pancakes for 4–5 minutes on each side, until deeply browned and the sweet potato in the center is completely soft when you cut open a test pancake.
Briefly drain the pancakes on a paper towel and serve with plain yogurt.
