  • 1 sheet puff pastry

  • 150 g spinach

  • 60 g feta cheese

  • 1 egg

  • 1 garlic clove

  • 1 tablespoon olive oil

Steps

  1. Preheat a conventional oven (no fan) to 200°C and position a rack in the middle. Heat the olive oil in a skillet over medium heat, add the spinach and finely chopped garlic, and cook for 3–4 minutes, until the spinach wilts and its liquid evaporates. Let cool.

  2. Mix the cooled spinach with the crumbled feta.

  3. Cut the puff pastry into squares, add the filling, fold them over, and firmly press the edges together with a fork.

  4. Brush the pockets with beaten egg and bake for 15–18 minutes on a parchment-lined baking sheet, until the pastry has puffed and is evenly golden.
