About this recipe

Orzo pasta salad with feta is a fresh snack with tomato, cucumber, and olive oil that works well in a lunchbox or as a light meal. The small orzo shapes mix evenly with the vegetables and feta, giving each bite a similar balance of ingredients. Feta adds a salty, bold flavor, while the tomato and cucumber bring juiciness and freshness. Let the pasta cool completely before adding the other ingredients so the feta does not break apart too much. This simple pasta salad works well in a lunchbox or as a snack that can be made ahead.

Ingredients

Servings: 2

  • 120 g orzo pasta

  • 60 g feta cheese

  • 1 tomato

  • 1/2 cucumber

  • 1 tablespoon olive oil

Steps

  1. Cook the orzo pasta for 8–10 minutes, until al dente, then let cool completely.

  2. Dice the tomato and cucumber, and crumble the feta.

  3. Combine all the ingredients with the olive oil, stirring gently so the feta does not break apart completely.

  4. Chill the salad for 15–20 minutes before serving, or transfer it to a lunchbox right away.
