120 g orzo pasta
60 g feta cheese
1 tomato
1/2 cucumber
1 tablespoon olive oil
Steps
Cook the orzo pasta for 8–10 minutes, until al dente, then let cool completely.
Dice the tomato and cucumber, and crumble the feta.
Combine all the ingredients with the olive oil, stirring gently so the feta does not break apart completely.
Chill the salad for 15–20 minutes before serving, or transfer it to a lunchbox right away.
