About this recipe

Roasted bell pepper hummus is a creamy spread made with chickpeas, tahini, garlic, olive oil, and soft roasted bell pepper. The bell pepper adds sweetness, color, and a mild roasted note that pairs well with the sesame flavor of tahini. Chickpeas provide the substantial base, while garlic deepens the savory flavor. If the hummus is too thick, thin it with a tablespoon of water or chickpea liquid. Serve it with bread or raw vegetable sticks, or use it as a homemade dip for a gathering.

Ingredients

Servings: 4

  • 1 can chickpeas

  • 1 roasted bell pepper

  • 2 tablespoons tahini

  • 1 garlic clove

  • 1 tablespoon olive oil

To serve

  • raw vegetable sticks or bread

Steps

  1. Pat the bell pepper dry, remove the skin if it is tough, and cut it into smaller pieces.

  2. Drain the chickpeas and reserve a little of the liquid.

  3. Blend the chickpeas with the bell pepper, tahini, garlic, and olive oil; if needed, add 1–2 tablespoons of the reserved liquid or water.

  4. Check the hummus’s consistency, then serve it with bread or vegetables once the bell pepper has evenly colored the spread.
