Roasted plum, creamy burrata, and pistachio toasts make an impressive seasonal appetizer for late summer and fall. Sweet-tart roasted fruit, lightly crisp bread, fresh basil, and a drizzle of honey come together in a quick, modern appetizer for a gathering with friends, a tapas-style dinner, or a casual party. The recipe is simple and uses ingredients available at an ordinary grocery store.
Ingredients
Servings: 6
Bread and Fruit
1 baguette, cut into 12 slices
6 ripe plums, halved and pitted
2 tablespoons olive oil
1 tablespoon honey
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
Toppings
2 balls of burrata (about 250 g)
40 g unsalted pistachios, coarsely chopped
1 handful of fresh basil, torn into smaller leaves
1 tablespoon balsamic vinegar or balsamic glaze
Steps
Preheat a convection oven to 200°C and line a baking sheet with parchment paper.
Arrange the plums cut-side up, drizzle with olive oil, sprinkle with salt and pepper, then bake for 15–18 minutes, until softened and releasing their juices.
At the same time, toast the baguette slices for 5–7 minutes, until golden and crisp.
Drizzle the honey over the warm plums and gently toss them with the juices on the baking sheet.
Top each toast with burrata, 1–2 plum halves, and a little of the roasting juices.
Sprinkle with pistachios, add the basil, and drizzle with balsamic vinegar or balsamic glaze. Serve immediately.
