About this recipe

Chłodnik Litewski with egg is a Lithuanian-style cold soup made with kefir, plain yogurt, beets, cucumber, dill, and boiled egg. Beets give it color and gentle sweetness, cucumber adds freshness, and the dairy base provides a pleasantly tangy, refreshing flavor. Egg makes the chłodnik more filling, so it works well as a light lunch on a warm day. Serve it well chilled.

Ingredients

Servings: 4

  • 500 ml kefir

  • 300 ml plain yogurt

  • 2 cooked beets

  • 1 cucumber

  • 2 eggs

  • dill

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

Steps

  1. Chill the kefir and yogurt. Dice the cucumber finely, grate the beets on the large holes of a box grater, and chop the dill.

  2. Place the eggs in boiling water and cook for 9 minutes, then cool them in cold water and peel.

  3. In a bowl, combine the beets, cucumber, dill, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Pour in the kefir and plain yogurt, then mix thoroughly.

  4. Refrigerate the chłodnik for 30 minutes.

  5. Cut each egg in half. Ladle the chłodnik into four bowls and place one egg half in each.
