Ingredients

  • 450 g frozen peas

  • 1 onion

  • 700 ml vegetable broth

  • a few mint leaves

  • 2 tablespoons yogurt

  • 1 tablespoon olive oil

Steps

  1. Chop the onion, keep the peas frozen until they are added, and reserve the mint and yogurt for the final stage to preserve their fresh flavor.

  2. Sauté the onion in the olive oil for 3–4 minutes, until softened. Pour in the broth and bring to a gentle boil.

  3. Add the frozen peas to the hot broth and cook for 5–7 minutes, just until tender, so they retain their green color.

  4. Remove the pot from the heat, add the yogurt and mint leaves, then blend briefly into a creamy, fresh-tasting soup.

  5. Serve immediately after adding the mint and yogurt. Do not simmer the soup again for a long time, so the peas retain their color and the mint retains its fresh aroma.
