Ingredients

  • 900 g tomatoes

  • 1 onion

  • 2 cloves garlic

  • 700 ml vegetable broth

  • 1 tablespoon olive oil

  • a few basil leaves

Steps

  1. Preheat the oven to 200°C. Halve the tomatoes, quarter the onion, and leave the garlic cloves whole.

  2. Arrange the tomatoes, onion, and garlic on a baking sheet, drizzle with the olive oil, and roast for 25–30 minutes, until the tomatoes are tender and lightly browned.

  3. Transfer the roasted vegetables to a pot, pour in the broth, and cook for 8–10 minutes so the flavors come together.

  4. Blend the roasted tomatoes, onion, and garlic with the broth until smooth.

  5. Add the basil and serve the soup right away.
