Ingredients

Servings: 4

  • 900 ml vegetable broth

  • 500 ml tomato passata

  • 80 g mozzarella

  • a few basil leaves

  • 1 tablespoon olive oil

Steps

  1. Cut or tear the mozzarella into smaller pieces, rinse the basil, and have the tomato passata, broth, and olive oil ready for the soup base.

  2. Heat the olive oil in a pot, pour in the tomato passata, and cook for 2 minutes, stirring. Add the broth and simmer over low heat for 10 minutes, until the tomato flavor concentrates.

  3. Add the mozzarella to the hot soup just before serving so it softens slightly. Tear the basil leaves over the top.
