Batter

  • 180 g all-purpose flour

  • 250 ml buttermilk

  • 1 egg

  • 2 small apples

  • 1 teaspoon baking powder

Steps

  1. Peel the apples, then either dice them finely or grate them on the large holes of a box grater.

  2. In a bowl, whisk together the buttermilk and egg, then add the flour, baking powder, and apples.

  3. Cook the racuchy in small portions for 3–4 minutes per side in a well-heated nonstick skillet over medium heat, with no added fat, so the apples soften and the centers cook through.
