About this recipe

Hash browns with fried eggs make a filling hot breakfast featuring crisp potato patties and fried eggs. Thoroughly squeezing the grated potatoes and onion allows them to brown well, leaving the outsides crisp and the centers tender. Removing the excess liquid is essential; otherwise, the patties steam instead of frying. Cook the eggs separately or alongside the hash browns so you can control how set the yolks become. Serve immediately while the hash browns are hot and crisp.

Ingredients

Servings: 2

  • 300 g potatoes

  • 2 eggs

  • 1 small onion

  • 1 tablespoon butter

Steps

  1. Grate the potatoes and onion on the large holes of a box grater, then thoroughly squeeze out the excess liquid.

  2. Heat the butter in a skillet, shape the potato mixture into two patties, and fry over medium heat for 4–5 minutes per side, until well browned on both sides.

  3. In another skillet or alongside the patties, fry the eggs for 3–5 minutes, until the yolks are set to your liking.

  4. Serve the crisp hash browns immediately with the hot eggs.
