  • 4 slices sandwich bread

  • 150 g button mushrooms

  • 60 g mild semi-hard cheese

  • 1 small onion

Steps

  1. Slice the mushrooms, finely chop the onion, and grate or thinly slice the cheese.

  2. Cook the mushrooms in a well-heated nonstick skillet for 3–4 minutes, until they release their liquid. Add the onion and cook for another 2–3 minutes, until it softens and the liquid evaporates. Divide the mushroom filling and cheese between two bread slices and cover with the remaining slices.

  3. Toast the sandwiches for 3–5 minutes, until the bread is golden and the filling is heated through.

  4. Serve immediately, while the cheese is fully melted.
