About this recipe

Baked apricots with crumble are a simple oven dessert that pairs soft fruit with a crisp topping of flour, sugar, and plant-based butter. As they bake, the apricots become sweeter, juicy, and slightly tart, while sliced almonds add a delicate aroma and pleasant texture to the crumble. Rub the topping into uneven crumbs so it bakes up crisp rather than compact. Serve after a brief rest, when the apricot juices have thickened slightly.

Ingredients

Servings: 4

  • 8 apricots

  • 80 g all-purpose flour

  • 50 g plant-based butter

  • 30 g sugar

  • 1 tablespoon sliced almonds

Steps

  1. Wash the apricots, cut them in half, and remove the pits.

  2. Toss the apricots with 10 g of the sugar and arrange them cut side up in a baking dish.

  3. Rub the flour, remaining 20 g sugar, plant-based butter, and sliced almonds together with your fingers to make a crumble.

  4. Sprinkle the crumble over the apricots and bake at 180°C for 20–30 minutes, until the fruit is soft.

  5. Serve after cooling briefly, when the apricot juices have thickened slightly.
