The chocolate batter made with butter, eggs, sugar, and flour creates a moist, dense base, while the twaróg adds contrast and forms a pale, creamy pattern. Do not blend the twaróg fully into the chocolate batter; drag it through in a few places to create a visible swirl. Wait until the brownie is completely cool and the center has set before slicing.

Ingredients

  • 150 g dark chocolate

  • 120 g butter

  • 2 eggs

  • 100 g sugar

  • 120 g twaróg (Polish farmer’s cheese)

  • 80 g all-purpose flour

Steps

  1. Melt the dark chocolate and butter over low heat or in a double boiler, then let cool slightly.

  2. Mix the eggs with the sugar without beating vigorously, as the base should be dense. Set aside 2 tablespoons of the egg mixture in a separate small bowl.

  3. Combine the chocolate mixture with the remaining egg mixture, then briefly fold in the flour.

  4. Blend the twaróg with the reserved egg mixture into as smooth a cream as possible. Spoon it in dollops over the chocolate batter and drag through with a skewer, creating distinct streaks.

  5. Bake the brownie with the twaróg swirl at 170°C for 22–28 minutes; the center may remain slightly moist.

  6. After baking, cool the brownie completely so the twaróg layer can be cut cleanly.
