Watermelon sorbet with lime is a light, intensely fruity dairy-free dessert, ideal for hot days and easy to make at home. Ripe watermelon flesh is blended with simple syrup and lime juice, then frozen, stirring the mixture several times to create a delicate, easy-to-scoop consistency. The sorbet can be made without an ice cream maker; before serving, simply let it stand at room temperature for a few minutes.

Sorbet

  • 1.2 kg ripe watermelon flesh, rind and seeds removed

  • 120 g superfine sugar

  • 120 ml water

  • 2 tablespoons freshly squeezed lime juice

Steps

  1. Heat the water and sugar in a small saucepan over medium heat for about 3 minutes, stirring until the sugar has completely dissolved. Do not bring the syrup to a vigorous boil; remove it from the heat and cool to room temperature, about 20 minutes.

  2. Cut the watermelon flesh into smaller pieces and transfer to a blender. Add the cooled syrup and lime juice, then blend for 1–2 minutes, until the mixture is completely smooth.

  3. Pour the mixture through a fine-mesh sieve into a shallow metal or plastic container intended for freezing. Discard the fibrous solids and cover the container.

  4. Place the container in a freezer set to about −18°C for 60 minutes, until the edges of the mixture begin to firm up while the center remains soft.

  5. Remove the container and vigorously stir the mixture with a fork or briefly blend it with an immersion blender, breaking up the ice crystals. Repeat the stirring every 45–60 minutes 3 more times, until the sorbet is evenly frozen and fluffy.

  6. Cover the sorbet and freeze for another 2–3 hours, until firm. Before serving, let it stand at room temperature for 8–10 minutes so it is easy to scoop with a spoon.
