  • 150 g mascarpone

  • 30 g white chocolate

  • 100 ml whipping cream (30% fat)

  • 120 g raspberries

  • 2 tablespoons crushed sponge cookies

Steps

  1. Melt the white chocolate gently and let it cool slightly so it does not curdle the cream.

  2. Briefly whip the cold mascarpone and whipping cream just until noticeably thickened. Slowly pour in the cooled but still liquid chocolate in a thin stream, mixing on low speed only until combined.

  3. Leave the raspberries whole or lightly crush about half of them into a sauce.

  4. Layer the cream, raspberries, and crushed sponge cookies in dessert glasses.

  5. Refrigerate the dessert cups for 20–30 minutes, until the mascarpone and white chocolate cream has set slightly.
