Apple and pear kompot combines the fresh, slightly tart flavor of apples with the gentle sweetness of pears. A piece of cinnamon stick adds a warm spice aroma without overpowering the fruit. Cut the apples and pears into similarly sized pieces, and add very ripe pears a little later so they retain their shape. Serve this mild, fruity kompot slightly warm or chilled.

Ingredients

Servings: 6

  • 2 apples

  • 2 pears

  • 1.5 liters water

  • 1 tablespoon sugar

  • a small piece of cinnamon stick

Steps

  1. Wash the apples and pears, remove the cores, and cut them into similarly sized pieces. Firmer apples can be cut slightly smaller than the pears.

  2. Bring the water to a boil with the sugar and cinnamon stick. Add the apples first, then add the pears after 2–3 minutes if they are very ripe.

  3. Simmer the kompot over low heat for 10–15 minutes, until the fruit releases its flavor but does not break down into a purée. The cinnamon should be noticeable but not dominant.

  4. Remove the pot from the heat and let the kompot rest briefly. Serve warm with the fruit, or chill and strain it before pouring into a pitcher.
