Cherry kompot has a deep color, tart flavor, and lightly spiced aroma from cinnamon and cloves. Cherries hold up well to brief cooking and need to stay on the heat only long enough to release their juice and color the water. Sugar mellows the fruit's tartness, while the spices add warm depth. If you cook the cherries with their pits, strain the kompot before serving or make it clear that the fruit is only a garnish.

400 g cherries
1.5 liters water
1 tablespoon sugar
a small piece of cinnamon stick
2 cloves
Steps
Wash and pit the cherries if you plan to serve the fruit in the kompot. If you leave the pits in, plan to strain the drink before serving.
Bring the water to a boil with the sugar, cinnamon stick, and cloves. Add the cherries to the hot liquid and reduce the heat.
Cook for 10–12 minutes, until the cherries release a deep color and tart flavor. The spices should only highlight the fruit, not overpower its aroma.
Set the kompot aside for a few minutes so the cherries and spices meld. Serve warm or chilled; if the cherries still have their pits, strain the drink before pouring.
