About this recipe

Plum kompot is a full-flavored drink with a deep color, a slightly tart taste, and a warm spice aroma. Plums pair well with cinnamon and cloves, while a small amount of sugar balances their natural acidity. Simmer the fruit gently so it releases its flavor without turning into a purée. After a brief rest, the kompot develops a fuller flavor and can be served with the fruit or strained.

Ingredients

Servings: 6

  • 500 g plums

  • 1.5 liters water

  • 1 tablespoon sugar

  • a small piece of cinnamon stick

  • 2 cloves

Steps

  1. Wash the plums, cut them in half, and remove the pits. If the fruit is very ripe, leave it in larger pieces so it does not break down completely.

  2. Bring the water to a boil with the sugar, cinnamon, and cloves. Add the plums to the hot liquid and simmer over low heat.

  3. Cook for 10–15 minutes, until the plums release a deep color and the skins begin to soften. Do not stir too often so the fruit does not turn into a purée.

  4. Let the kompot rest after cooking so the spices deepen the plum flavor. Serve warm or chilled, with the fruit or strained.
