Ingredients

Drink
500 ml chilled 100% apple juice
250 ml chilled sparkling water
1 medium cucumber (about 200 g)
2 limes
10–12 fresh mint leaves
2 teaspoons maple syrup or agave syrup, optional
1 pinch salt, optional
For Serving
ice cubes
lime slices and thin cucumber slices for garnish
Steps
Wash the cucumber and cut it into thin slices or very thin half-moons. Cut 4 thin slices from one lime for garnish, then squeeze the juice from the remaining parts of both limes.
Pour the apple juice and lime juice into a pitcher, then add the mint and cucumber. If you prefer a slightly sweeter taste, sweeten with maple syrup or agave syrup.
Gently press the mint with a spoon, just enough to release its aroma, then add the optional pinch of salt.
Refrigerate the pitcher for 10 minutes to allow the flavors to combine.
Just before serving, add the sparkling water and stir very gently to preserve the bubbles.
Pour the drink into ice-filled glasses and garnish with a slice of lime and cucumber.
