  • 400 g apricots

  • 1.5 liters water

  • 1 tablespoon sugar

  • juice of 1/2 lemon

  • a pinch of vanilla

Steps

  1. Wash the apricots, cut them in half, and remove the pits. Leave very soft fruit in larger pieces so it does not fall apart right away during cooking.

  2. Bring the water, sugar, and vanilla to a boil. Add the apricots to the hot liquid and reduce the heat so the kompot simmers gently.

  3. Cook for 6–8 minutes, until the apricots release their color and soften slightly. Add the lemon juice at the end to balance the sweetness of the ripe fruit.

  4. Let the kompot stand for a few minutes so the apricot flavor deepens. Serve with the apricot halves, or strain it if you prefer a clearer drink.
