Rhubarb kompot has a pronounced tart flavor and fresh aroma, balanced by a small amount of sugar and a pinch of vanilla. Cut the rhubarb into larger pieces and cook it briefly, just until it flavors the water and begins to soften. Lemon juice sharpens its tart character, so add it near the end. Serve the kompot slightly cooled or thoroughly chilled.

400 g rhubarb
1.5 liters water
2 tablespoons sugar
juice of 1/2 lemon
a pinch of vanilla
Steps
Wash the rhubarb, trim the ends, and cut the stalks into 2–3 cm pieces. Do not chop it too finely, as it softens quickly.
Bring the water to a boil with the sugar and vanilla. Add the rhubarb to the hot liquid and immediately reduce the heat.
Cook for 6–7 minutes, until the rhubarb releases its tart flavor and begins to soften. Add the lemon juice near the end to sharpen the kompot’s fresh, tart profile.
Remove the kompot from the heat before the rhubarb falls apart completely. Serve slightly cooled or chilled, with pieces of rhubarb or strained.
