Simmer the kompot gently and briefly so the berries retain their aroma. Serve it with the strawberries or strain it.

Ingredients

  • 400 g strawberries

  • 1.5 liters water

  • 1 tablespoon sugar

  • juice of 1/2 lemon

  • a pinch of vanilla

Steps

  1. Wash the strawberries, remove the stems, and cut larger berries in half. Leave smaller ones whole so the kompot does not become too cloudy.

  2. Bring the water, sugar, and vanilla to a boil. Add the strawberries to the hot water and reduce the heat; delicate berries do not need a vigorous boil.

  3. Simmer for 5–7 minutes, until the strawberries release their color and aroma. Stir in the lemon juice near the end to keep the sweetness from tasting flat.

  4. Set the kompot aside for a few minutes so the strawberry flavor infuses the drink. Serve with the fruit, or strain it for a clearer, lighter kompot.
