The currants release their aroma into the water quickly, so gentle simmering with sugar and a little vanilla is all they need. Lemon juice adds freshness and keeps the sweetness from tasting flat. Serve the kompot with the fruit, or strain it for a clearer drink. It is best after a brief rest, which gives the currant aroma time to intensify.

Ingredients

Servings: 6

  • 300 g black currants

  • 1.5 liters water

  • 2 tablespoons sugar

  • juice of 1/2 lemon

  • a pinch of vanilla

Steps

  1. Rinse the black currants in a sieve, remove the stems, and discard any damaged fruit. There is no need to crush the currants before cooking, as they release their color quickly.

  2. Bring the water to a boil with the sugar and a pinch of vanilla. Once the sugar has dissolved, add the currants and reduce the heat so the kompot barely simmers.

  3. Cook for 7–8 minutes, until the drink turns deeply colored and distinctly currant-flavored. Add the lemon juice near the end to brighten the fruit's tart flavor.

  4. Remove the pot from the heat and let the kompot stand for a few minutes so the currants release more aroma. Serve with the fruit, or strain for a clearer drink.
