Homemade gooseberry lemon soda is a refreshing, lightly tart drink with a fruity aroma and gentle bubbles. The gooseberries are briefly cooked with sugar to draw out their flavor, then combined with lemon juice and sparkling water. Chill the drink thoroughly and serve it over ice on hot days.

Ingredients

Soda

  • 500 g gooseberries, washed and stemmed

  • 150 g sugar

  • 400 ml still water

  • 2 lemons, juiced; 100 ml juice needed

  • 800 ml well-chilled sparkling water

  • 200 g ice cubes

Steps

  1. Wash the gooseberries, remove the stems, and transfer the fruit to a saucepan. Add the sugar and 400 ml still water.

  2. Heat the gooseberries over medium heat and cook for 8 minutes, stirring, until the fruit softens and partially bursts and the sugar dissolves completely.

  3. Pour the hot liquid through a fine-mesh sieve into a large pitcher, gently pressing the fruit with a spoon. Let cool completely, then chill for 1 hour.

  4. Pour 100 ml freshly squeezed lemon juice into the cold syrup and stir thoroughly.

  5. Just before serving, add 800 ml well-chilled sparkling water and 200 g ice cubes. Stir gently to preserve the bubbles and serve immediately.
