Iced watermelon-lime lemonade with mint is a cold, refreshing no-cook drink for hot days. It takes only a few minutes to prepare, followed by a brief chill, and works well with lunch, on a balcony, at a picnic, or at a summer family gathering. Serve it with ice cubes, lime slices, and mint for a more eye-catching presentation.
Ingredients
Servings: 4
800 g seedless watermelon, diced
80 ml lime juice (from about 2–3 limes)
25–35 g fresh mint, leaves plus a few sprigs for serving
500 ml cold sparkling water
2–3 tablespoons agave or maple syrup, to taste
200 g ice cubes
1 lime, sliced for serving
Steps
Blend the watermelon until smooth, then strain it through a sieve if you prefer a clearer drink.
Add the lime juice, agave or maple syrup, and most of the mint leaves to the watermelon juice, then briefly stir.
Refrigerate the lemonade base for 10–15 minutes so it chills thoroughly.
Just before serving, pour in the cold sparkling water and stir gently so the drink retains its bubbles.
Add the ice cubes to glasses, pour in the lemonade, and garnish with lime slices and mint sprigs.
Serve the lemonade immediately for the coldest, most refreshing result.
