About this recipe

Iced lemonade with cucumber, mint, and green tea is a light drink for hot days with bright citrus flavor and a subtle green tea note. It is quick to make, looks striking in a pitcher, and works well with lunch, on the patio, or at a gathering with friends. Made from simple ingredients, it tastes best after a brief chill and with plenty of ice.

Ingredients

Servings: 4

  • 2 green tea bags

  • 500 ml hot water

  • 1 large pickling cucumber (about 250 g)

  • 2 lemons

  • 1 lime

  • 2–3 tablespoons agave or maple syrup

  • 10 mint leaves

  • 500 ml cold sparkling water

  • 2 cups ice cubes

Steps

  1. Pour the hot water over the green tea bags and steep for 3 minutes, then remove the bags and set the tea aside to cool for 10 minutes.

  2. Meanwhile, partially peel the cucumber, slice it, and squeeze the juice from the lemons and lime.

  3. Pour the cooled tea, citrus juice, and agave or maple syrup into a pitcher, then stir thoroughly until the sweetener dissolves.

  4. Add the cucumber and mint, then gently muddle a few mint leaves with a spoon to release their aroma.

  5. Just before serving, add the ice cubes, pour in the cold sparkling water, and stir gently so the drink retains its bubbles.

  6. Serve immediately in tall glasses with additional cucumber slices and a mint leaf.
