About this recipe

Homemade podpiwek is a lightly carbonated, refreshing drink made with roasted barley, hops, and yeast, well suited to warm days. No specialized equipment is required: a pot, strainer, and clean bottles are enough. Fermentation takes about one day, and the finished drink should be thoroughly chilled before serving. Use plastic bottles so you can easily monitor pressure during carbonation, and do not keep podpiwek at room temperature for long.

Ingredients

Servings: 8

  • 2 L water

  • 80 g roasted barley or plain roasted grain coffee substitute

  • 5 g dried hop cones

  • 70 g sugar

  • 3 g fresh baker's yeast

  • 1 tablespoon lemon juice

Steps

  1. Pour the water into a pot, add the roasted barley and hops, and bring to a boil. Simmer over low heat for 10 minutes, until the infusion is dark brown and distinctly aromatic.

  2. Strain the infusion through a fine-mesh sieve into a large, clean container. Add the sugar and stir until completely dissolved.

  3. Cool the infusion to about 25°C; it should be lukewarm, not hot. Add the crumbled fresh yeast and lemon juice, and stir thoroughly with a clean spoon.

  4. Pour the drink into two clean 1 L plastic bottles, leaving about 4 cm of headspace. Cap the bottles, but do not fill them all the way to the top.

  5. Leave the bottles at room temperature, about 20–22°C, for 18–24 hours. Once the bottles become noticeably firm, move them to the refrigerator; do not leave them in the warmth any longer, to limit the buildup of pressure.

  6. Chill the podpiwek for at least 6 hours and continue to store it in the refrigerator. The drink is fermented, so it may contain a small amount of alcohol. Open the bottles slowly over a sink because the drink may foam vigorously. If mold or a distinctly unpleasant odor appears, discard the drink.
