Iced hibiscus tea is an intensely tart drink made with hibiscus infusion, lemon, honey, and ice. Hibiscus gives it a deep color and a fruity-floral flavor, while lemon enhances its fresh, sour character. Add the honey after the tea has cooled slightly so it blends easily into the infusion without turning it into syrup. This iced tea is well suited to serving very cold, especially when you want a vivid color and a stronger flavor.

  • 2 hibiscus tea bags

  • 800 ml water

  • 1 lemon

  • 1 tablespoon honey

  • ice cubes

Steps

  1. Steep the hibiscus tea bags for 5–7 minutes, then remove them. Hibiscus needs a longer steeping time than green tea to release its color.

  2. Wash the lemon and squeeze out the juice; you can reserve a few thin slices for serving. Remove the seeds so they do not end up in the pitcher.

  3. Add the honey and lemon juice to the slightly cooled hibiscus tea. Stir, then chill the drink in the refrigerator.

  4. Serve with ice cubes. Stir before pouring, as the tart lemon juice and honey should be evenly distributed.
