About this recipe

Strawberry and mint kompot is a light drink made with strawberries, water, sugar, mint, and lemon juice, with a fresh, fruit-forward flavor. The strawberries infuse the water with a sweet summer aroma, while mint added at the end provides a cooling note without being cooked for too long. Lemon juice balances the fruit's sweetness and keeps the flavor bright. Simmer the kompot only briefly, until the strawberries soften and tint the water.

Ingredients

Servings: 6

  • 400 g strawberries

  • 1.5 liters water

  • 1 tablespoon sugar

  • a few mint leaves

  • juice of 1/2 lemon

Steps

  1. Wash the strawberries, remove the hulls, and halve any larger berries. Rinse the mint leaves and set them aside for the end so they retain their fresh aroma.

  2. Bring the water and sugar to a boil, add the strawberries, and reduce the heat. Simmer gently, without a vigorous boil.

  3. After 5–6 minutes, add the lemon juice. Add the mint only after removing the pot from the heat so it gives the drink a fresh flavor without developing a bitter aftertaste.

  4. Cover the pot for a few minutes so the mint releases its aroma. Serve the kompot chilled or lukewarm, with the strawberries or strained.
