Strawberry-rhubarb lemonade with basil and lemon is a lightly tart, refreshing seasonal drink for warm days. Served over ice with lemon slices and basil leaves, it has a modern look and a distinctly fresh flavor.
Ingredients
Servings: 4
Fruit Syrup
300 g strawberries, hulled
200 g rhubarb, cut into 2 cm pieces
80 g sugar
250 ml water
1 small lemon, juice and zest
To Serve
600 ml cold sparkling water
10 fresh basil leaves
ice, for serving
2 lemon slices, for garnish
Steps
In a saucepan, combine the strawberries, rhubarb, sugar, water, and lemon zest. Bring to a boil over medium heat, then cook for 8–10 minutes, until the rhubarb is completely soft.
Remove the saucepan from the heat, add the lemon juice, and lightly mash the fruit with a spoon to release more flavor. Let stand for 10 minutes.
Strain the syrup through a strainer into a pitcher, pressing firmly on the fruit. Discard the pulp, or use it with yogurt or oatmeal.
Just before serving, add the cold sparkling water and half of the basil leaves to the pitcher, then stir gently so the drink retains its bubbles.
Fill glasses with ice, pour in the lemonade, and garnish with the remaining basil and a lemon slice. Serve immediately while the drink is very cold.
