About this recipe

Apricot and almond balls are a sweet snack made with dried apricots, rolled oats, honey, and coconut. Briefly soaked apricots blend easily and give the mixture fruity sweetness and stickiness. Almonds add a mild nutty flavor, while rolled oats help the balls hold together. Shredded coconut complements the apricots and adds a dessert-like finish. Chill the balls before serving so they become firmer.

Ingredients

Servings: 10

  • 100 g dried apricots

  • 80 g almonds

  • 40 g rolled oats

  • 1 teaspoon honey

  • 1 tablespoon shredded coconut

Steps

  1. Cover the dried apricots with warm water for 5 minutes, then drain thoroughly and pat dry with a paper towel.

  2. Blend the apricots with the almonds, oats, and honey into a sticky mixture.

  3. Shape into small balls and roll them in the shredded coconut.

  4. Refrigerate for at least 20 minutes before serving.
