About this recipe

These baked carrot fries are an oven-roasted vegetable snack seasoned with olive oil, thyme, salt, and pepper. Roasting makes the carrots sweeter and more aromatic, while thyme balances their natural sweetness. Cut the carrots into evenly sized sticks so they cook at the same rate and brown lightly at the ends. Olive oil helps the seasonings coat the carrots, and pepper adds gentle heat. Serve them as a snack or a lighter side for a simple meal.

Ingredients

Servings: 4

  • 4 carrots

  • 1 tablespoon olive oil

  • 1 teaspoon thyme

  • a pinch of salt

  • a pinch of pepper

Steps

  1. Preheat a conventional oven (no fan) to 210°C and position a rack in the middle. Peel or scrub the carrots and cut them into sticks about 1.5 cm thick.

  2. Toss the carrots with the olive oil, thyme, salt, and pepper.

  3. Arrange the carrot sticks on a parchment-lined baking sheet in a single layer, leaving small gaps between them.

  4. Bake for 20–25 minutes, turning after about 12 minutes, until the carrots are tender when pierced and lightly browned.

  5. Let cool uncovered for 5 minutes and serve.
