  • 2 sweet potatoes

  • 1 tablespoon olive oil

  • 1/2 teaspoon paprika

  • a pinch of salt

  • a pinch of pepper

Steps

  1. Preheat the oven to 200°C with convection and position a rack in the middle. Peel the sweet potatoes or scrub them thoroughly, then cut them into sticks about 1.5 cm thick.

  2. Dry them thoroughly, then toss with the olive oil, paprika, salt, and pepper.

  3. Arrange the fries in a single layer on a baking sheet lined with parchment paper, leaving space between them.

  4. Bake for 20–25 minutes, turning after about 12 minutes, until the edges are browned and the centers are tender when pierced with a fork.

  5. After removing from the oven, leave the fries uncovered on the baking sheet for 5 minutes, then serve.
