  • 80 g popcorn kernels

  • 1 tablespoon clarified butter

  • 1/2 teaspoon paprika

  • a pinch of salt

  • a pinch of pepper

Steps

  1. Heat the clarified butter in a heavy-bottomed pot over medium-high heat. Add 3 popcorn kernels and cover.

  2. When the test kernels pop, add the remaining popcorn kernels, cover, and shake the pot every few seconds. Remove from the heat when the pauses between pops lengthen to about 2–3 seconds.

  3. Immediately transfer the popcorn to a bowl and sprinkle with paprika, salt, and pepper.

  4. Mix thoroughly and serve slightly warm.
