These oven-baked beet chips are made with beets, olive oil, lemon juice, salt, and pepper. Slice the beets very thinly so moisture escapes quickly and the edges can become crisp. Lemon juice balances their earthy sweetness, while olive oil distributes the seasonings evenly. Watch closely near the end of baking because thin slices can quickly go from browned to too dark. 2 beets
1 tablespoon olive oil
a pinch of salt
a pinch of pepper
1 teaspoon lemon juice
Steps
Preheat the oven to 160°C with convection and position a rack in the middle. Peel the beets and slice them about 1–1.5 mm thick.
Toss the slices with the olive oil, lemon juice, salt, and pepper.
Arrange the beets in a single layer on a baking sheet lined with parchment paper, without overlapping the slices.
Bake for 18–25 minutes, rotating the baking sheet after about 10 minutes. Remove thinner slices earlier, when they are dry around the edges and beginning to curl.
Transfer the chips to a wire rack and leave uncovered for 5 minutes to dry further and become crispier.
