About this recipe

Bruschetta with mozzarella and cherry tomatoes is a crisp appetizer made with baguette, olive oil, basil, and mild cheese. The toasted baguette creates a crisp contrast with the soft mozzarella and juicy cherry tomatoes. Add the basil at the end so it retains its fresh aroma and does not lose its color in the heat. Olive oil enhances the flavor of the bread and tomatoes, but it should not overpower the other ingredients. This simple caprese-style bruschetta works well for dinner, a gathering, or a quick snack.

Ingredients

Servings: 4

  • 1 baguette

  • 80 g mozzarella

  • 8 cherry tomatoes

  • a few basil leaves

  • 1 tablespoon olive oil

Steps

  1. Slice the baguette, drizzle with olive oil, and toast until lightly browned.

  2. Cut the cherry tomatoes in half, and tear or cut the mozzarella into smaller pieces.

  3. Arrange the mozzarella and cherry tomatoes on the slices; if you want a warmer version, return them to the oven for another 1–2 minutes.

  4. Add the basil before serving.
