About this recipe

A cheese and corn quesadilla is a warm snack made with flour tortillas, melted cheese, yogurt, and sweet corn. The corn adds juiciness and mild sweetness, while the melted cheese binds the filling and creates a soft, stretchy center. A thin layer of yogurt helps keep the filling in place and mellows the paprika. Cook the quesadilla in a dry skillet until the tortillas are golden and the cheese has melted completely. It makes a quick meatless snack, a simple dinner, or a warm dish served in wedges.

Ingredients

Servings: 2

  • 2 flour tortillas

  • 120 g cheese

  • 4 tablespoons corn

  • 1 tablespoon yogurt

  • a pinch of paprika

Steps

  1. Grate or finely chop the cheese.

  2. Spread one tortilla thinly with yogurt, scatter over the cheese and corn, then cover with the second tortilla.

  3. Cook the quesadilla in a dry skillet for 3–4 minutes per side, until the cheese melts and the tortilla is golden.

  4. Cut into triangles and serve warm.
