About this recipe

These tortilla pinwheels combine mozzarella, sun-dried tomatoes, spreadable cheese, and arugula in a bold Mediterranean-style filling. Mozzarella brings a mild, milky flavor, while sun-dried tomatoes add intensity and a lightly sweet-tart note. Arugula cuts through the creamy ingredients with freshness and a gentle peppery bite. A thin layer of spreadable cheese helps hold the filling in the tortillas. These pinwheels make a simple lunchbox item, party bite, or quick cold snack.

Ingredients

Servings: 2

  • 2 flour tortillas

  • 80 g mozzarella

  • 3 sun-dried tomatoes

  • a handful of arugula

  • 2 tablespoons spreadable cheese

Steps

  1. Finely chop the sun-dried tomatoes, then pat the mozzarella dry and tear it into pieces.

  2. Spread the cheese over the center of each tortilla to help hold the arugula and mozzarella in place.

  3. Arrange the mozzarella, sun-dried tomatoes, and arugula on the tortillas, then roll them up.

  4. Chill for a few minutes, then slice into pinwheels.
