About this recipe

Mini tortilla pizzas are thin, crisp snacks topped with tomato passata, cheese, mushrooms, and oregano. Tortillas bake much faster than traditional pizza dough, making them well suited to small portions. Tomato passata provides the tomato base, the cheese melts on top, and the mushrooms add savory flavor. Watch them closely because the tortilla edges crisp quickly. This simple recipe works well for a quick meal, a snack, or small portions served right away.

Ingredients

Servings: 2

  • 2 flour tortillas

  • 60 ml thick tomato passata

  • 80 g cheese

  • 4 button mushrooms

  • a pinch of oregano

Steps

  1. Preheat a conventional oven (no fan) to 200°C and position a rack in the middle. Cut the tortillas into smaller rounds or quarters and arrange them on a parchment-lined baking sheet.

  2. Spread each piece with a very thin layer of thick tomato passata, using 60 ml in total.

  3. Top with grated cheese, button mushrooms sliced about 2 mm thick, and oregano.

  4. Bake for 6–8 minutes, until the edges are dry and crisp and the cheese has completely melted.
