Rolls

  • 8 rice paper sheets

  • 250 g seedless watermelon, cut into thin sticks

  • 1 medium cucumber, cut into thin sticks

  • 120 g feta cheese, crumbled

  • 1 handful of mint leaves

  • 1 handful of basil leaves

  • 1 small handful of arugula

Sauce for Serving

  • 150 g plain yogurt

  • 1 tablespoon lime juice

  • 1 teaspoon honey

  • 1 small garlic clove, finely grated

  • 1 pinch of salt

  • 1 pinch of black pepper

Steps

  1. In a small bowl, mix the yogurt, lime juice, honey, garlic, salt, and pepper. Refrigerate the sauce while you prepare the rolls.

  2. Prepare a wide bowl of lukewarm water and a large plate or board for rolling. Arrange all the fillings nearby within easy reach.

  3. Dip one rice paper sheet in the water for 10–15 seconds, until softened, then transfer it to the board. Arrange a little arugula, cucumber, watermelon, feta, mint, and basil on the lower part of the sheet.

  4. First fold the sides inward, then roll everything up tightly like a spring roll. Repeat with the remaining sheets, moistening your hands if the paper starts to stick.

  5. Arrange the finished rolls in a single layer on a plate, cover with a lightly damp paper towel or plastic wrap, and chill for 10 minutes so they are easier to cut and eat.

  6. Serve immediately after chilling with the yogurt-lime sauce.
