About this recipe

Cranberry and pumpkin seed bars are a baked snack made with rolled oats, banana, honey, and dried cranberries. Mashed banana binds the mixture and adds natural sweetness, while honey makes the bars a little sweeter and more dessert-like. Cranberries bring a lightly tart note that balances the mild oat base. Pumpkin seeds add crunch and give the bars a more varied texture. Press the mixture firmly into the pan so the baked bars cut cleanly into even pieces.

Ingredients

Servings: 4

  • 180 g rolled oats

  • 50 g dried cranberries

  • 2 tablespoons pumpkin seeds

  • 2 ripe bananas (about 240 g after peeling)

  • 2 tablespoons honey

Steps

  1. Mash the bananas with a fork into a smooth purée.

  2. Mix the purée with the honey, oats, cranberries, and pumpkin seeds until all the dry ingredients are evenly moistened.

  3. Transfer the mixture to a 20 × 20 cm pan lined with parchment paper, level it, and press down firmly.

  4. Bake for 20–25 minutes in a conventional oven (no fan) preheated to 180°C, on the middle rack. Cool completely and cut into 4 even bars.
