Drain and dry the canned chickpeas thoroughly so they brown well instead of staying soft from excess moisture. Ingredients

  • 1 can of chickpeas

  • 1 tablespoon olive oil

  • 1 teaspoon curry powder

  • a pinch of salt

  • a pinch of pepper

Steps

  1. Preheat the oven to 200°C with the fan on and position a rack in the middle. Drain, rinse, and dry the chickpeas very thoroughly with a towel.

  2. Toss them with the olive oil, curry powder, salt, and pepper until the seasonings evenly coat the chickpeas.

  3. Spread the chickpeas loosely in a single layer on a baking sheet lined with parchment paper.

  4. Roast for 20–25 minutes, shaking the baking sheet after about 12 minutes, until the chickpeas are browned and dry on the surface.

  5. Cool for 5 minutes on the baking sheet in a single layer, uncovered; serve only once the moisture has evaporated and they are crisp.
