About this recipe
Grilled Oscypek with cranberries is a warm snack of smoked cheese and sweet-tart preserve. Choose genuine, firm Oscypek made from sheep's milk, possibly with added cow's milk, and cut it into fairly thick slices. On a dry nonstick grill pan, the surface browns quickly while the center becomes soft and springy. Turn the cheese only when it releases easily from the pan, and do not keep heating it too long, so it does not melt between the ridges. Serve in small portions straight from the pan while still warm.
Ingredients
Cheese and cranberries
320 g smoked Oscypek made from sheep's milk, possibly with added cow's milk, weight of the slices before grilling
100 g ready-made cranberry preserve for cheese or meat, with pieces of fruit
Steps
Cut the Oscypek crosswise into about eight slices, 1–1.5 cm thick, and pat their surfaces dry with paper towels. Heat a dry nonstick grill pan over medium heat for 2–3 minutes; do not let it smoke. Divide the cranberry preserve among four small bowls, about 25 g each.
Place four slices in the pan, leaving space between them, and grill for 2–3 minutes without moving them. Once the underside is browned and the cheese releases easily from the ridges, turn with a spatula and grill the other side for another 2–3 minutes. Remove when the slices are warm and soft under gentle pressure but still hold their shape; if they darken quickly or start to melt, lower the heat and stop heating. Cook the second batch in the same way, serving the first immediately, without waiting for the remaining cheese.
Allow about two warm cheese slices and one small bowl of cranberry preserve per serving. Serve immediately as a snack, before the Oscypek cools and firms up again. Add the preserve on the plate or spoon it up separately, without heating it in the pan with the cheese.
