About this recipe
These oven-baked zucchini sticks are a light snack coated with egg, breadcrumbs, Parmesan, and pepper. Drying the zucchini thoroughly before breading helps it develop a firmer texture as it bakes. Parmesan adds a savory, lightly salty flavor, while breadcrumbs form a delicate coating without pan-frying. Serve them straight from the oven as a warm vegetable snack or a simple dinner side.
Ingredients
Servings: 4
2 zucchini
1 egg
3 tablespoons breadcrumbs
30 g Parmesan
a pinch of pepper
Steps
Preheat the oven to 200°C on the conventional setting (no fan) and position a rack in the middle. Cut the zucchini into even sticks about 1.5 cm thick and dry them thoroughly.
Beat the egg in a bowl, then combine the breadcrumbs, Parmesan, and pepper in another bowl.
Dip the zucchini sticks in the egg, then coat them in the breadcrumb mixture.
Arrange the zucchini in a single layer on a parchment-lined baking sheet and bake for 20–25 minutes, turning after 12 minutes, until the coating is golden and the zucchini is tender when pierced with a fork.
Transfer the sticks to a wire rack for 2–3 minutes to let the coating set.
