  • 2 zucchini

  • 1 egg

  • 3 tablespoons breadcrumbs

  • 30 g Parmesan

  • a pinch of pepper

Steps

  1. Preheat the oven to 200°C on the conventional setting (no fan) and position a rack in the middle. Cut the zucchini into even sticks about 1.5 cm thick and dry them thoroughly.

  2. Beat the egg in a bowl, then combine the breadcrumbs, Parmesan, and pepper in another bowl.

  3. Dip the zucchini sticks in the egg, then coat them in the breadcrumb mixture.

  4. Arrange the zucchini in a single layer on a parchment-lined baking sheet and bake for 20–25 minutes, turning after 12 minutes, until the coating is golden and the zucchini is tender when pierced with a fork.

  5. Transfer the sticks to a wire rack for 2–3 minutes to let the coating set.
