About this recipe

Chilled melon and cucumber soup is a refreshing blend of sweet melon, fresh cucumber, yogurt, lime, and mint. Melon gives the base a delicate fruit flavor, cucumber keeps it light, and lime juice provides a tangy counterpoint. Mint heightens the cooling effect, making the soup especially welcome on a hot day. This unusual but simple chilled soup tastes best after a short rest in the refrigerator.

Ingredients

Servings: 4

  • 400 g melon

  • 1 cucumber

  • 250 ml yogurt

  • lime juice

  • a few mint leaves

Steps

  1. Cut the melon and cucumber into smaller pieces, chill the yogurt, and squeeze the juice from the lime.

  2. Transfer the melon and cucumber to a blender, then add the lime juice and mint leaves.

  3. Pour in the yogurt and blend for 60–90 seconds, until the soup is smooth.

  4. Chill the soup in the refrigerator for 20 minutes and serve well chilled.
