1 can chickpeas
1 carrot
1 onion
900 ml vegetable broth
1 teaspoon curry powder
Steps
Drain and rinse the chickpeas, cut the carrot into a small dice, and finely chop the onion.
Cook the onion in a pot for 4 minutes in about 50 ml of the 900 ml broth. Add 1 teaspoon curry powder and stir for 30 seconds.
Add the carrot, pour in the remaining broth, and cook for 10 minutes.
Add the drained chickpeas and cook for another 5 minutes.
Check that the carrot is tender and serve when the chickpeas are hot but still retain their texture.
