  • 1 can chickpeas

  • 1 carrot

  • 1 onion

  • 900 ml vegetable broth

  • 1 teaspoon curry powder

Steps

  1. Drain and rinse the chickpeas, cut the carrot into a small dice, and finely chop the onion.

  2. Cook the onion in a pot for 4 minutes in about 50 ml of the 900 ml broth. Add 1 teaspoon curry powder and stir for 30 seconds.

  3. Add the carrot, pour in the remaining broth, and cook for 10 minutes.

  4. Add the drained chickpeas and cook for another 5 minutes.

  5. Check that the carrot is tender and serve when the chickpeas are hot but still retain their texture.
