Tomato white bean soup is a hearty, thick soup made with white beans, passata, carrot, and onion in vegetable broth. The passata gives it a mild tomato flavor, while the beans make the soup thicker and more substantial. Carrot and onion round out the vegetable base and balance the acidity of the tomatoes. It is a simple meatless soup that still feels like a full meal.

250 g dried white beans
300 ml tomato passata
1 carrot
1 onion
1.3 L vegetable broth
Steps
Soak the beans in cold water overnight, then drain. Dice the carrot and finely chop the onion.
In a pot, cook the onion for 4 minutes with about 50 ml of the broth, until softened.
Add the beans and carrot, pour in the remaining broth, and cook over low heat for 50–70 minutes, until the beans are completely tender.
Pour in the passata and cook for another 5–8 minutes.
Check the beans for tenderness and the soup for consistency, then let it stand for 5 minutes before serving.
